Japanese knife production areas are related to Japanese sword history because the knife craftsmen and Manufacturers are usually descendants of the Blacksmiths from the Warring States period or the Edo period.

Tsubame Sanjo City : not only kitchen knives, but also production of nail clippers, metal tableware, pots and pans, etc., it is a prosperous city. Kitchen knives are produced in various work styles, such as large manufacturers or individual brands.

Seki City is located in central Japan and is the largest Japanese knife production area. And it’s very close to our office. In making knives, they are using division of labor. There are specialists in some processes. Manufacturers leave some steps to specialists, that is why knives of higher quality and lower price can be made. Therefore, Seki knives are of high quality and at the lowest price.

In Echizen City each maker works independently. Most of the processes are carried out within the same manufacturer. Compared to the division of labor system of Seki city, this method is expensive. So the price of kitchen knives is a bit high. However, there are many unique and attractive kitchen knives in Echizen.

Kochi(Tosa) City is located in the southern part of Japan, and many knife craftsmen continue to make Japanese traditional knives such as Kurouchi(black finished). They are handmade and make knives that haven’t changed since the Samurai era.
